Resumo: The objective of this study was to assess the viability of the dehydration process in the maintenance of physical-chemical and microbiological quality of sugarcane juice powder. The sugarcane juice was subjected to filtration and emulsification processes. Cane juice powder with and without lime were dehydrated in a lyophilizer and characterized according to the content of lipid, protein, moisture, ash, calcium and iron, hydrogen potential (pH), total titratable acidity (TTA), total soluble solids (TSS) , vitamin C, total phenolics, total sugar, color, total aerobic mesophilic count and water activity. For the filtration cotton had greater efficiency in sugarcane juice and the cellulose ester membrane in sugar cane juice powder with and without lime.The concentration of 2% emulsifier had higher overrun in the emulsification process of sugarcane juice. The liquid cane juice had higher moisture, pH, titratable acidity, soluble solids, total aerobic mesophilic count and water activity.The cane juice powder with and without lime showed high concentrations of lipids, ash, iron, total sugars, brightness and chroma b *. However, cane juice powder was observed higher in protein and phenolic compounds and sugar cane juice with lime powder were found higher values of total acidity and vitamin. Therefore, the process of dehydration by lyophilization the sugar cane juice and can be another feature shown in maintaining quality and can increase the shelf life of this product.
