Resumo: The polymeric coating on fruits presents as an alternative to avoid losses that occur in every productive sector. Systems that apply protective solutions to fruits should be formulated taking into account all current legislation. The procedures used take into account characteristics such as loss of mass, organoleptic and visual properties, transmission of water vapor. This work aims to present a coating formulation in fruits increasing the shelf life, using the natural polymer. The polymers were prepared in order to obtain polymer dispersions effective to coating application. The proposed method comprised the zein dissolved in hydroalcoholic medium using oleic acid as plasticizer. This method was evaluated for the process and manner of coating application. The polymer films obtained by casting were characterized by the transmission of water vapor. The results showed that zein dispersed in hydroalcoholic solution can be used as film former and sealing layer in coating systems as an alternative for the protection of moisture sensitive fruits acting as a barrier. This characteristic is due in large part to the presence of nonpolar groups and insolubility in water. It is concluded, therefore, that zein biopolymers combined with oleic acid and quercetin have desirable characteristics for the application in coating of fruits, besides biodegradability, biocompatibility and renewable source, being feasible its application in apples.
