Resumo: In face of the growing use of bioethanol for several purposes, there has been an increase on the market demand and competitiveness, which in turn requires a revision of industrial processes, with a focus on optimization and cost reduction. The bioethanol fermentation process occurs through the metabolization of reducing sugar by preselected yeast types. Since bioethanol fermentation is a complex and dynamic process, it calls for comprehensive studies to continuously improvement of the biofuel sector. In this study, data on the fermentation process of the Santa Terezinha Sugarcane Mill - Gaucha City Unit was collected daily during the 2016 and 2017 harvest periods. First, a factor analysis was used to group explanatory variables. Then, a logistic regression was used to investigate the relationship between the fermentation tanks’ ARRT by-products/leftovers and the explanatory variables. The most important explanatory variables were the sugarcane must quality (24.31%), nutrition/food/feeding quality (11.53%) and fermentation quality (9.14%). These results support the formulation of action plans to correct or/and improve the studied fermentation process, which may result in promising prospects for future harvests and possible financial gains for sugarcane companies.
